Cabbage Fritters with Kefir

Preparation:

1. Chop the cabbage. The finer, the better. Then, add salt. It needs to release its juice. To achieve this, knead it well with your hands.
2. Finely chop the onion. You can use a blender or a grater.
3. Mix in all the other ingredients and stir well. You should have a smooth batter, with the consistency of thick sour cream. If it's too runny, you can add a little more flour.
4. Spread a small amount of oil on a preheated pan. Fry the fritters on both sides until they are a pleasant light brown color. Use medium heat.

You can blot the excess oil with a paper towel by placing the fritters on it right after frying. They are delicious both warm and hot. Serve with a delicious sauce.
