Preparation:
I. For the cream:
a) Whisk the eggs;
b) Mix granulated sugar and starch in another bowl and add salt;
c) After adding milk, stirring, keep on medium heat until thickened and boiling (wait approximately 1 minute after it starts boiling);
c) Add 2-3 tablespoons of the sugar-milk mixture to the eggs and immediately mix well (the eggs should not curdle);
d) Add the prepared egg mixture to the bowl with the milk-sugar mixture and boil on low heat for 1 minute, stirring occasionally;
e) Remove from heat and combine with butter, sprinkle with vanillin. After cooling, place in a closed container in the refrigerator.
II. Crumble crackers (it's convenient to do this in a bag). Mix the crumbs in a bowl with granulated sugar and warmed butter.
III. Spread the cookie mixture on a baking sheet and bake in a preheated oven (175 °C) until golden for 10 minutes. Wait for it to cool.
IV. Assemble the dessert:
In ramekins (or low glasses with a wide opening), layer as follows:
1st layer — 2 tablespoons of baked crumbs (press down with a spoon or potato masher);
2nd layer — cold cream;
3rd - a few banana slices;
4th - whipped cream;
5th - sprinkle with cookie crumbs, drizzle with caramel.
Repeat layers, starting from the second.
Before serving, decorate with banana pieces and mint leaves. You can enjoy it immediately or keep it in the refrigerator for a couple of hours.
